Turmeric Ginger Healing Soup

Instructions

Heat coconut oil in a large pot over medium heat. Add onion, carrots, and celery. Cook 5–6 minutes until softened.

Add garlic, ginger, and turmeric. Stir and cook 1 minute until fragrant.

Pour in bone broth and bring to a simmer.

Add shredded chicken and coconut aminos. Simmer 10 minutes.

Stir in spinach or kale and cook until just wilted, about 2 minutes.

Finish with lemon juice and salt. Taste and adjust seasoning.

Ladle into bowls and serve hot.
Chef's Note
The black pepper traditionally paired with turmeric is omitted here for strict AIP. The bone broth itself provides plenty of anti-inflammatory benefit.
