Sweet Potato Breakfast Hash

Instructions

    Heat avocado oil in a large skillet over medium-high heat. Add diced sweet potato and cook 8–10 minutes, stirring occasionally, until lightly browned and tender.

    Push sweet potatoes to the side. Add onion and cook 3–4 minutes until softened.

    Add garlic and cook 30 seconds until fragrant.

    Add ground turkey and break it apart with a spatula. Cook until no longer pink, about 6–8 minutes.

    Season with thyme, rosemary, garlic powder, and sea salt. Stir in coconut aminos.

    Toss everything together and cook another 2 minutes. Taste and adjust seasoning.

    Serve topped with fresh parsley.
